Bison meat has fewer calories and less saturated fat than beef, and a relative proportion of unsaturated to saturated fats is better for health, especially heart health.
Compared to beef, bison meat is also richer in protein. Bison meat consumption is better for the heart and blood vessels than beef. Bison meat reduces inflammation and lowers oxidative stress.

Bison are native to North America and are undomesticated. You won't find bison sitting in a cage waiting for someone to feed them. They move around and graze as they have for centuries — interacting with the ecosystem the way they are intended and improving grassland vegetation, growth, and sustainability.
a delicacy
Bison are listed as "exotic" by the USDA despite being native to North America (unlike beef). While that's likely due to bison almost becoming extinct in the late 19th century before restoration efforts began, we like to think it's because of the sweeter, richer flavor that characterizes bison.
